BALNEA spa + réserve thermale welcomes Maxime Delmont as Executive Chef of LUMAMI restaurant

Bromont, August 6, 2024 / – BALNEA spa + réserve thermale is proud to announce the nomination of Maxime Delmont as the new Executive Chef of LUMAMI restaurant. With over 18 years of experience in prestigious establishments, including Alain Ducasse at the Plaza Athénée in Paris and his key role in the opening of Le Rosélys at Fairmont Reine Elizabeth, Maxime Delmont brings expertise and skills that will elevate LUMAMI to new horizons.

Inspired by the generous nature of the BALNEA spa + réserve thermale estate, Maxime creates delectable dishes featuring local flavors. LUMAMI guests can now enjoy his new creations on the menu, featuring seasonal produce freshly harvested from BALNEA’s own gardens.

From BALNEA’s gardens to LUMAMI’s table

Launched in spring 2023, BALNEA’s garden project embodies the principles of the short circuit by adopting a “garden to table” philosophy. The gardens supply LUMAMI with a wide range of fresh fruit, vegetables and herbs. Thanks to a greenhouse equipped with a geothermal heating system, BALNEA’s gardens ensure year-round food self-sufficiency for the restaurant.

BALNEA’s gardens set themselves apart by committing to the principles of sustainable agriculture and the application of integrated pest management methods, which considerably reduce their environmental impact. This sustainable approach guarantees high-quality local produce, enriching LUMAMI’s culinary creations while preserving the local ecosystem.
